Lemon Bread

1 1/2 C. Flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

3 eggs

1 C. sugar

2 TBS. Softened butter

1 tsp. vanilla

1 tsp. lemon extract

1/3 C. lemon juice

1/2 C. vegetable oil

 

Lemon Icing

1C. plus 1TBS powdered sugar

2 TBS. milk

1/2 tsp. lemon extract

Preheat oven to 350 degrees. In a lagre bowl combine flour, baking soda, baking powder and salt.  In a separate bowl, blend eggs, sugar, butter, vanilla, oil, lemon extract, and lemon juice.  Combine egg mixture with dry ingredients. Mix until smooth. Pour into a well greased 9x5 loaf pan. Bake 45 minutes(or until done)

When loaf is cool, remove from pan and ice with icing.

PLEASE NOTE! The lemon extract is very important in this recipe. Do not leave it out or try to substitute with more lemon juice.
